If you select a glass bakeware pan or a dark, non-stick pan, reduce the oven temperature by at least 25 degree F.If the substitute pan causes the depth of the ingredients to be thinner, reduce cooking time by 15 minutes. If the depth is thicker, increase cooking time by 15 minutes. Whenever you select a substitute pan, keep in mind that you need to allow room for certain foods to expand as they cook.
Pyrex is the original glass Bakeware. You can see through the dishes to see what you are cooking. It is no longer just available in clear glass, though, you can purchase different shades of Pyrex to coordinate with your kitchen. That way you can take the dishes out of the oven and put them right on the table, giving it even more appeal. Unfortunately, glass can chip, crack and break, so if you drop Pyrex or other glass dish, it is probably a goner.
If you are down to the last resort and you really have to substitute, choose the pan or the bakeware which has the closest size to the recommended one by your recipe. You should take into account the volume that it will take. Consider the ingredients and everything that you will have to put in to the pan so that you will know and choose something of the ideal depth. Selecting one closest to the recipe is asking will allow you to achieve the same cooking temperature and the time of cooking.
