That is the plight of so many of us who spend time in the kitchen. I would not call myself a chef per se but with a large family I end up doing a lot of cooking. I started out using odd equipment gifted to me from family members and gradually moved up to higher quality pieces over the years. I actually have nice copper-bottom pans; I just can not find them with any ease. Recently I have gotten on a kick to install better kitchen storage and it is starting to make a difference. By doing a couple of cabinets at a time I can keep the costs down while making encouraging progress in the kitchen.
